Spiced Pumpkin Apple Spread

Apparently Trader Joe's pumpkin butter is a thing...like a big thing. I've been loving having cozy bowls of oatmeal for breakfast, so I've decided to change it up from my regular berry jam to this batch of pumpkin goodness. I tried to follow the Trader Joe's copycat recipe, but I never have apple cider on hand, so I decided to create my own pumpkin apple spread. It tastes like pumpkin pie filling and applesauce in one AKA exactly what you need this season.



Ingredients

Makes ~ 1 1/3 c spread

  • 1 T butter (sub coconut oil)

  • 2 T brown sugar

  • 1 apple

  • 1 c pumpkin puree

  • 1 t pumpkin pie spice (sub 1/2 t cinnamon and 1/8 t nutmeg)


Directions

  1. Peel apple and puree in a food processor.

  2. In a small sauce pan, add brown sugar and butter. Heat on medium until the brown sugar starts to bubble and caramelize.

  3. Add apple puree and mix together. Cook until the apple starts to caramelize. Add pumpkin puree. Cook mixture, stirring constantly, until it reaches desired thickness.

  4. Add pumpkin pie spice. Let cook for a few more minutes.

  5. Cool before storing.
