When you're in the mood for vegetables but also want paneer butter masala, try our mixed vegetable curry with paneer to get the best of both!
Ingredients
Yield: 6 servings
1/2 c cashew
1 inch piece of ginger
3-4 cloves garlic
2 green chilies
2 T tomato paste
1 T butter
1 T oil
3 pieces cardamum
6 cloves
1 inch piece cinnamon stick
1 star anise
1 t black pepper balls
1/2 t turmeric
1/4 c half and half
1 c peas and carrots
1 red bell pepper, chopped
1/2 onion, diced
4-5 mushrooms, chopped
7 oz paneer, cubed (~1 cup)
Cilantro (garnish)
Directions
Preparation time: 30 minutes
Cook time: 45 minutes
Soak cashews in 1 cup hot water for at least 15 minutes.
If using store-bought paneer, cut paneer in 4 slices. Soak paneer slices in warm water for at least 30 minutes.
Using a spice grinder, grind cardamum, cloves, star anise, cinnamon stick, and black pepper.
Chop ginger, garlic, and green chili. Fry in 1 T butter and 1/2 T oil for 1-2 minutes.
Add onions and fry for 2 minutes.
Add red bell pepper and cook for 5 minutes.
Add peas and carrots and cook for 3-4 minutes.
Add mushroom and cook for 2-3 minutes.
Add tomato puree and cook for 2-3 minutes.
Add spice mix, mix together, and cook for 2-3 minutes. By now, all the vegetables should be cooked.
Puree soaked cashews and hot water until smooth.
Add cashew paste and cook for 5 minutes.
Add paneer cubes and cook for 5-7 minutes.
Add half and half, turmeric, and salt and cook for 5 minutes.
Garnish with cilantro and serve with malbar paratha.
