Mediterranean Lavash Wraps

Combining all of your favorite elements of Mediterranean cuisine: hummus, baba ghanoush, roasted vegetables, falafel, and lavash into one delicious meal.



Ingredients

4 servings

  • 4 large pieces of lavash

  • 8 pieces falafel

  • 1/2 red bell pepper

  • 1 small zucchini

  • 4 portobello mushrooms

  • Rosemary

  • Dill

  • 6 lettuce leaves, sliced

  • English cucumber, diced

  • Hummus

  • Baba Ghanoush

  • Bell pepper dip (optional)

  • Avocado, sliced (optional)


Directions

Takes about 30 mins to 1 hour depending on how well you multitask

  1. Preheat air fryer.

  2. Chop and cook red bell pepper, zucchini, and portobello mushrooms (in that order) in a bit of salt and oil. Once cooked, season with a pinch of rosemary and dill.

  3. Cook falafel in the air fryer for about 10 minutes. Cut falafel into quarters.

  4. Preheat panini grill to medium heat.

  5. On each piece of lavash, coat 2/3 in hummus and 1/3 in baba ghanoush. Layer lettuce over the hummus. Add roasted vegetables and hummus to middle third of the lavash. Top with English cucumber and avocado.

  6. Wrap lavash wrap in thirds and place on panini grill. Grill for a few minutes until the lavash is warm. Don't grill for too long or the lavash will become too dry and fall apart.
