Low Fat Oatmeal Raisin Cookies

Welcome to my first I-didn't-follow-a-recipe recipe! I made these cookies on a whim after being unhappy about how I couldn't find an oatmeal raisin cookie that had less than half a cup of butter. Some experimenting later, and we have my original low fat oatmeal raisin cookies.


Ingredients

  • 1 c instant or old fashioned oats

  • 1/4 c whole wheat flour

  • 1/4 c almond flour

  • 1/4 c all purpose flour

  • 1 1/2 t baking powder

  • 2 t cinnamon

  • 1/4 t nutmeg

  • 1/4 t salt

  • 2 T olive oil (sub coconut oil)

  • 1 egg

  • 1/2 t vanilla

  • 2 T almond milk

  • 3 T white sugar

  • 3 T brown sugar

  • 1/3 c raisins

  • 1/4 c chopped walnuts


Directions

  1. Let raisins soak in water for at least 20 minutes.

  2. Lightly toast nuts in the oven at 350˚F for 5 minutes.

  3. Pulse old fashioned oats in a food processor 10-15 times.

  4. Mix oats, flours, baking powder, cinnamon, nutmeg, and salt.

  5. In a separate bowl, mix together olive oil, egg, vanilla, and almond milk. Add in sugar and brown sugar and mix. Combine with dry ingredients.

  6. Drain the raisins. Fold in raisins and walnuts.

  7. Chill cookie dough 30 minutes.

  8. Preheat the oven to 325˚F.

  9. Drop cookie dough into 1 T balls onto baking tray lined with parchment paper. Slightly flatten into a circular shape.

  10. Bake for 11-14 minutes.

  11. Cool before eating.
