Lighter Lemon Bars

These lemon bars have some slight changes to make them healthier, which means you an enjoy more lemony deliciousness. I'm not a huge fan of lemons, but I love these.




Crust Ingredients

  • 1/2 c oat flour

  • 1/2 c all-purpose flour

  • 1/4 c brown sugar

  • 1/4 t salt

  • 1/4 t rosemary

  • 3 T butter, melted

  • 2 T almond milk


Filling Ingredients

  • 3 eggs

  • 1/2 c Greek yogurt

  • 1/3 c agave (sub maple syrup or honey)

  • 1/3 c lemon juice (~ 2-3 lemons)

  • 1/2 t vanilla extract

  • 1/4 t salt


Directions

  1. Preheat oven to 350˚F (375˚F for my oven). Line an 8x8 baking pan with parchment paper including the sides.

  2. Mix together crust ingredients. Press down into the baking pan to cover the entire base.

  3. Bake crust for 20 minutes. Cool for 10 minutes.

  4. Mix together all filling ingredients until completely smooth. Use an electric hand mixer with the whisk attachment if needed.

  5. Pour onto cooled crust.

  6. Bake for 30 minutes.

  7. Cut after completely cooled.
