I'm always missing Chipotle, so I've been trying to make my own sofritas for quite a while. The key ingredient: chipotle peppers in adobo sauce. Chipotle peppers are ripened jalapeños that have been smoked and dried, and they are usually sold in smokey adobo sauce. Adding chipotle peppers to your tofu is a game changer for sofritas and make quite the dupe!

Ingredients
16 oz tofu
1/2 t cumin powder
1/4 t black pepper
2 t oregano
1/2 t brown sugar
1 t paprika
4 small chipotle peppers or 2 large (~2 T chopped)
2 T adobo sauce
1/4 water or vegetable broth
1/2 onion (supposed to taste good, did not add because of salmonella)
3 cloves garlic, minced
1 1/2 T tomato paste
2 T soy sauce
1 T rice vinegar (sub cider vinegar)
1/2 - 1 t salt
Directions
Press the tofu. Wrap the tofu in paper towels and place a heavy object on top for at least 10 minutes.
Sofritas sauce: Blend chipotle peppers, adobo sauce, water or broth, onions, garlic, tomato paste, soy sauce, and vinegar in a food processor until smooth.
Spice blend: Mix together cumin, black pepper, oregano, brown sugar, and paprika.
Crumble tofu. Lightly sauté in a frying pan for 3-4 minutes. Add sauce and bring to a boil. Reduce the heat and add salt and spice blend. Cook for an additional 5-7 minutes until most of the sauce is absorbed.
