Chocolate Tiramisu Cupcakes

Cupcakes

  • 3/4 c flour

  • 1/2 c cocoa powder

  • 1/2 t espresso powder (adjust to taste)

  • 3/4 t baking powder

  • 1/2 t baking soda

  • 1/4 t salt

  • 2 eggs

  • 1/4 c + 1 T sugar

  • 1/4 c + 2 T brown sugar

  • 1/3 c oil

  • 1 1/2 t vanilla extract

  • 1/2 c buttermilk (sub milk)

Mascarpone Frosting

  • 8 oz mascarpone cheese

  • 3 T powdered sugar

  • 1/2 - 1 T milk (adjust as needed)

  • espresso powder (garnish)


Directions

  1. Frosting: Whip together mascarpone, sugar, and milk until frosting can hold its shape. Adjust milk and sugar to taste and texture. Do not overwhip. Chill.

  2. Cupcakes: Mix flour, cocoa powder, baking powder, baking soda, salt, and espresso powder.

  3. In a separate bowl, whisk eggs. Add sugar, brown sugar, oil, and vanilla and mix.

  4. Combine half the milk and half the wet ingredients with the dry ingredients. Slightly mix, but not completely. Add remaining milk and wet ingredients and mix.

  5. Pour into greased cupcake pan and bake at 350˚F for 15-17 minutes.

  6. If using piping bags to frost, let frosting sit at room temperature for 10 minutes before piping.

  7. Sprinkle with espresso powder for garnish.
