Carrot Cake

Cake

  • 2 eggs

  • 1/2 c melted butter

  • 1/4 c + 2 T white sugar

  • 1/4 c + 2 T brown sugar

  • 1 t vanilla

  • 1 c flour

  • 1 t baking soda

  • 1 t baking powder

  • 1/4 t salt

  • 1 t cinnamon

  • 1/8 t nutmeg

  • 1 1/2 c grated carrots (~ 1 1/2 - 2 carrots)

  • 1/2 c chopped pecans

Cream Cheese Frosting

  • 3 T cream cheese

  • 2 T softened butter

  • 1/3 c - 1/2 c powdered sugar (adjust to taste)


Directions

  1. Beat together eggs, oil, sugar, and vanilla.

  2. Mix in flour, baking soda, baking powder, salt, and cinnamon.

  3. Fold in carrots and pecans.

  4. Pour into greased and floured pan and bake at 350˚F for 35 minutes.

  5. Frosting: Mix together frosting ingredients until smooth.

  6. Frost after cake has completely cooled.
