Breakfast Potatoes

Ingredients

  • 5 russet potatoes

  • 1 red bell pepper

  • 1/2 onion

  • 1 minced garlic

  • 1 T rosemary

  • 1 t salt

  • 1 t black pepper

  • 1 t paprika

  • olive oil

Directions

  1. Preheat oven to 500˚F.

  2. Dice potato, red bell pepper, and onion.

  3. Separate the potatoes from the red bell pepper and onion and drizzle all with olive oil and season with rosemary, garlic, paprika, salt, and pepper.

  4. Place potatoes on baking sheet and bake for 15 minutes. Then, add bell peppers and onion to baking sheet and continue baking for an additional 15 minutes.
