I like to think of banana bread as one of my signature recipes. It's my family's favorite and probably the recipe I've made the most times. I tried changing it up and little, so I have both the traditional and upgraded version combined into one. Feel free to mix and match ingredients to make it in your style!
Ingredients
1 3/4 c flour
1 1/4 t baking powder
1/2 t baking soda
3/4 t salt
1/4c butter, softened (upgrade: 1/4 coconut oil)
2/3 c sugar (upgrade: 1/4 c melted white chocolate + 1/4 c maple syrup + 2 T almond milk)
2 eggs
1 c mashed bananas (2-3 total)
1/2 add ons (walnuts, raisins, chocolate chips)
Directions
Take out butter to soften.
Toast walnuts at 350˚F for 5 minutes (optional).
Sift together flour, baking powder, baking soda, and salt.
TRADITIONAL: Cream butter. Gradually add sugar until light and fluffy. Add eggs and mix until smooth. UPGRADE: Melt white chocolate in intervals of 15 seconds (30 seconds total). Mix with coconut oil and add to flour mixture. Add maple syrup and almond milk directly to flour mixture.
Add mashed bananas and mix everything together.
Pour into parchment paper-lined loaf pan and bake at 350˚ F for 50-60 minutes.
